16-09-06 About Sake
This sake specific rice was first grown in Aichi prefecture (famous for Toyota motors) in 1965. It was developed by crossing non-sake specific strains of rice. It has a relatively large grain,so the senryujyu is 28.1g which is almost same as the more famous Yamadanishiki variety. Since the shinpaku manifestation rate of Tamasakae rice is lower than other sake specific rice varieties, it has been considered not ideal for Ginjo category sake, but it is preferred for sake which is to be aged. The major production areas are Tochigi, Toyama, Wakayama and Shiga prefectures.
